Artisanal Calabrese Soppressata Salami 350g
Soppressata is one of the most well-known and appreciated cured meats in Italy and around the world. It is made from pork cut into large pieces, combined with black pepper, fennel (whole), salt, and chili pepper. It is prepared by taking the best cuts of the pork leg, minced and removed from the sinews, and stuffing them into natural casings. Specifically, the casing from the large intestine must be used, thoroughly washed with water, wine, and lemon and soaked. Once the casing is filled, it is pierced with a pin and tied by hand. The whole thing is then left to air dry. After about two weeks, a linen sheet is placed on the floor and the soppressata are placed on top, one next to the other, making sure to leave a space of about one centimeter between them. The soppressata are then covered with another linen sheet, on top of which is placed a board (or a rigirato). Product subject to natural weight loss of +- 15% Product not covered by the FDA
