Harvest season is where everything begins. Each year, olives are carefully picked at their peak — typically between October and January, depending on the region and climate. The timing of harvest plays a crucial role in flavor. Early-harvest olives produce oils that are vibrant, green, and peppery. Later harvests yield softer, more rounded oils with a buttery finish. Because we work with small producers, harvests can vary slightly from year to year. Weather patterns, rainfall, and temperature shifts all influence the yield and the character of the oil. This is the beauty of artisan production — each season tells its own story. We believe transparency matters. That’s why we share updates on freshness, pressing dates, and seasonal availability. Quality ingredients deserve proper care. Artisan olive oil, balsamic, spices, and specialty pantry items are natural products — and how they’re stored directly affects their flavor, aroma, and longevity. Olive Oil Store in a cool, dark place away from heat, light, and direct sunlight. Avoid keeping bottles near the stove or in warm cabinets. Once opened, olive oil is best enjoyed within a few months to preserve its freshness and vibrant notes. Balsamic Vinegar Keep tightly sealed in a cool pantry. Unlike olive oil, aged balsamic is more stable and can maintain its quality for years when stored properly.
